Saltbush Chevre is a creamy and silky handmade Artisan Goat Cheese rolled in South Australian Saltbush. A traditional cheese made using fresh local goat’s milk from Towerview and Oskjberg goat dairies in the Adelaide Hills. Woodside Wright’s uses a long set traditional method to set the cheese overnight. The following day the curd is ladled into cheesecloth bags.
The Saltbush Goats Cheese is allowed to curdle and the it is drained for several hours; this process is very gentle as the curd has a delicate structure. This product is in its purest form with only a small amount of salt added. A further draining process occurs for ten days in a controlled environment.
This native Australian Saltbush is locally sourced to create this beautiful cheese. The crumpled leaves of Saltbush that coat the cheese gives it both a salty and herbal flavouring, which it is lightly rolled in and allowed to rest for 2 – 3 hours before packaging. This cheese is fantastic on any cheeseboard spread and enjoyed on warm crusty bread with lightly drizzled olive oil.

Kris Lloyd is the passionate Head Cheesemaker for Woodside Cheese Wrights, located in the Adelaide Hills region of South Australia. She is supported by her team of cheesemakers (including her son, Mitch) in making cheeses with traditional methods but innovative flavors and individual character.
Woodside Cheese Wrights makes cheese from goat, cow and buffalo producing fresh, white mold and matured cheeses.
